Wrapping up the leftovers
Yesterday evening, I shredded my weekend's roast spring chicken and turned all my leftovers into a Mexican fusion dinner.
So, what's on the plate?
A serving of refined beans, some left over chicken stuffings (it tasted heavenly when kept overnight), grilled leftover roast chickens with Cajun spices, 1/2 a baked potato with sour cream, lettuce, green pepper and some fresh tomatoes.
Wrapped all up in a soft taco and you'll get yourself a healthy and quick home cook dinner in less than 30 minutes!
