Red Dates Jelly Mooncake

The Chinese will be celebrating the Lantern Festival on the 15th day of the 8th month in the Chinese Calender. So, since I've nothing much to do over the weekends and my hands are itchy, I made some red dates jelly mooncake just for fun.

If you wish to try out this recipe, please check out CyberKuali

Red dates jelly (For the filling)
Soybean jelly (As the outer skin)

The jelly egg yoke recipe taken from here.

The jelly yokes

The red date jelly fillings

Here's my soybean jelly mooncake with red dates filling

Here's how the inside of the jelly looks like.

How's the taste?
Mmm...red dates...truly an acquired taste!

Definitely NOT X-T's favorite and it's not my cup of tea.
I enjoyed looking at these lovely treats more than eating them ;(
I'll stick to X-T's favorite red bean jelly for the filling next time

We end up making lychee cocktail with soybean milk and jelly egg yoke for dessert that evening. Nothing was put into waste ;)
