Amalfi baked lemons ala Jamie Oliver Style

Sister and I are both a great fan of Jamie Oliver's cooking. Here we are on a lazy Sunday afternoon, our first attempt to bake lemon skin with mozarella but with a cheaper ingredient..

The original recipe by Jamie Oliver

2 large unwaxed lemons
1-2 x 150g balls of buffalo mozzarella, sliced into 0.5cm/1/4 inch thick pieces
fresh bassil leaves
2 anchovy fillets
2 ripe cherry tomatoes, halved
salt and freshly ground black pepper
optional: 1 dried red chilli, crumbled


Our cheaper version

1 large "waxed" US lemon
1 ball of cow mozzarella, sliced "AS THIN AS POSSIBLE" because it's freaking RM14.99 per ball but it's cheaper as compared to buffalo mozzarella which is around RM28 per ball.
Extra Virgin Olive Oil (so that we can scrape out the flowing mozarella from the tray easily!)
Leftover ham to replace anchovy fillets (Too expensive here in Malaysia)
Bought cherry tomatoes but forgot to use
The rest of the ingredients..WE totally forgotten to buy!





The Verdict:
Chewy, tasty but we still think Jamie did a better job hehe...
